What do you do when there is so much bounty from a summer garden?
I spent one morning chopping, de seeding, roasting and carefully pouring tomato sauce in mason jars. The bounty from our garden is a blessing but Bill and I have more than we need, two people can only consume as much...It is so rewarding when a neighbor or friend give you a big smile when you hand them these crunchy, juicy, fresh and sweet tomatoes.
One of the ways to preserve these vegetables is by canning. It is a long process but is enjoyable as the end result gives me a sense of great appreciaton to Mother Earth.
I will be using these canned tomato sauce in the future in so many ways... with pasta, baked fish or meat...Ohhh the recipes are endless :)
